Champagne Pear Marinated Cheese

  • ½ c. Organic Arbequina Extra Virgin Olive Oil
  • ½ tsp. pepper
  • ½ c. Champagne Pear Balsamic Vinegar
  • 3 garlic cloves, minced
  • 3 T. chopped fresh parsley
  • 1 (2 oz.) jar diced pimento, drained
  • 3 T. minced green onions
  • 1 (8 oz.) block sharp cheddar cheese
  • 1 tsp. sugar
  • 1 (8 oz.) package cream cheese
  • ¾ tsp. dried basil
  • ½ tsp. salt
  • Garnish: fresh parsley sprigs
  • Assorted crackers

Combine first 10 ingredients in a jar; cover tightly & shake vigorously. Set marinade aside. Cut block of cheddar cheese in half lengthwise. Cut crosswise into ¼ inch thick slices. Repeat procedure with cream cheese. Stand cheese slices on edge in a shallow dish alternating types of cheese. Pour marinade over cheese. Cover & marinate in refrigerator at least 8 hours. Transfer rows of marinated cheese to a service platter in the same alternating fashion, reserving marinade. Spoon marinade over cheese slices. Garnish; serve with assorted crackers.
