Marinated Melon Salad

  • 1 personal sized seedless watermelon
  • 1 honeydew
  • 2-3 tablespoons Champagne Pear Balsamic Vinegar
  • 2-3 tabelspoons Persian Lime EVOO
  • 1 bunch torn basil leaves

Chunk up watermelon & honeydew into bite-sized pieces. Pour champagne pear balsamic vinegar & persian lime extra virgin olive oil over fruit. Cut 1 bunch of basil leaves into strips (or tear) & combine with fruit & vinaigrette. Let sit for at least 2 hours or up to 8. Enjoy!

Summer Barley Salad

  • 3/4 c. barley (cook according to instructions)
  • 1 plum tomato
  • 1 avocado
  • 1 small bunch fresh basil
  • 1/4 - 1/2 tsp. of your favorite seasoned salt blend
  • 2-3 T. Meyer Lemon Extra Virgin Olive Oil
  • 1-2 T. freshly squeezed lemon juice
  • 1/4 c. crumbled feta (if desired)

Cook barley; cool in fridge. Chop veggies & herbs. Whisk oil & lemon juice & seasonings. Combine all ingredients. Add feta if desired. Garnish with additional basil if desired. Let sit in the fridge 4-6 hours or overnight for best flavor.
